Nacho Cheese Kale Chips

Nacho average kale chips, HA!

The flavor is incredibly similar to Doritos nacho cheese and it’s all made with healing spices commonly found in the pantry!

Turmeric, I’m sure you’ve heard, is especially beneficial. It contains curcumin which has incredible anti-inflammatory properties.

Science is showing that chronic, low-grade inflammation in the body contributes to almost every chronic illness in the US, including:

Make sure to include black pepper whenever you use turmeric, components of pepper increase the bioavailability of curcumin by 2,000%!!

Incorporating foods such as turmeric, other fresh spices like those in this recipe, and herbs can help you combat inflammation in the body.

Word of advice, keep a close eye on these kale chips around the 10 minute mark. I cooked mine 13 minutes and some of them were burnt, oops!

Nacho Cheese Kale Chips

Ingredients:

• 1 bunch kale (cleaned and chopped)
• 1 Tbsp avocado oil
• 1/2 tsp lime juice, fresh (optional)

For the seasoning:

• 1/4 tsp ground turmeric
• 1/4 tsp ground cumin
• 1/4 tsp paprika
• 1/4 tsp chili powder
• 1/4 tsp garlic powder
• 1/4 tsp onion powder
• 1/4 tsp black pepper
• 1 Tbsp nutritional yeast (this provides most of the CHEESE flavor!)
• 1/2 tsp salt

Instructions:

1. Preheat oven to 350 degrees F.
2. Place all seasoning ingredients in a small bowl and whisk until well combined.
3. Pull kale leaves from stalk, wash, spin dry, and chop into chip size pieces.
4. Toss kale in bowl with oil and lime juice (optional).
5. Once coated, add seasoning a little at a time while continuing to toss kale.
6. Spread on a lined baking sheet (give plenty of space to your leaves, this will ensure they crisp instead of steam and get soggy), and bake about 10 minutes. Enjoy them crispy and warm!
